There is a question frequently asked by us, actually what is the ideal temperature should be met in order to save probiotic yogurt products?
Probiotic yogurt is actually a common yogurt that added the beneficial bacteria. So in fact the temperature to storage the probiotic yogurt products is the same with other yogurt products. Which should be explained here is that perhaps in our food or beverages (including yogurt) there is another bacteria that is patogen bacteria / harmful bacteria. The best temperature to prevent the development of harmful bacteria, the food or beverages should be stored at temperatures below 4°C.
So what happens when probiotic yogurt is stored at temperatures above 4°C ? actually, the probiotic batercia that added into yogurt is the bacteria that can grow and live in normal human body temperature, but so also with harmful bacteria. So the beneficial bacteria (probiotic) continues to grow at temperatures above 4°C and continues to grow in the yogurt until it can cause the bacteria run out of food and finally die. And on the other hand, any harmful bacteria will continue to thrive in yogurt and will harm our bodies if we consume them.
So if the probiotic yogurt product is too long stored at room temperature, it will cause dead a lot of probiotic such as running out of food in yogurt so that the benefits of probiotic would be lost. And what's worse is if the probiotic has been contaminated by harmful bacteria, the product will be dangerous for consumption.
